If you enjoy sweet desserts, you will love my mother’s creamy rice pudding also known in Spanish as arroz con leche. This was a favorite since I could remember. The best part- its super easy.
Wash rice well and put in 1 cup of water at low heat till the water is absorbed.
Add the 5 cups of milk, evaporated milk, sugar, cinnamon stick and salt.
Stir frequently to avoid rice sticking to pot. Cook time is one hour so don’t rush. When rice thickens a little you know its done. As when it cools it will thicken more.
Serve with a dash of cinnamon powder on top and enjoy!
